The Gourmet Dining Club A Series of Classes for Spring 2008
The culinary adventure continues! JCC’s Center for Continuing Education and Food Is Good, Inc. proudly bring our community a continuation of The Gourmet Dining Club - a series of gourmet culinary courses which range from Introduction to Gourmet Cooking to Exploring the World of Wines. We’re excited about this endeavor so join us as we laugh, improve our culinary skills, and break bread!
Get an authentic hands-on culinary experience as participants learn from the Food Is Good, Inc. Gourmet Chefs: Scott Bova, Andrew Culver, David Sampson, Chris Scarano, and Executive Chef Jonathan Haloua. Add ambiance to this adventure as each class will be held at the Chautauqua Culinary Center, 2 Academy St., Mayville, NY, the Ironstone Restaurant, 516 West 4th St., Jamestown, NY or Olive’s Restaurant, 215 West Lake Rd, Mayville, NY.

| Introduction to Gourmet Cooking |
|
(9 hours) - Have you ever found yourself caught in the dilemma of what to make that will amaze your guests? If you have or if you would like to take your culinary skills to the next level, this course will get you there! Participants will learn the cooking basics from product identification to defining what specifications in food selection, handling, preparation, and tasting merits a “gourmet” dining experience. Chefs will provide an introduction to grilling, frying, sautéing, roasting, pan searing, and poaching as well as give information on vinaigrettes and composed salads. Throughout these classes there will be an ongoing focus on knife skills, which encourages students to be comfortable and proficient in utilizing the proper tool for the specific job. | Introduction to Gourmet Cooking II |
|
(9 hours) - Now that you have the basics, it’s time to take this to the next level. Join us for this great class and advance your culinary skills as you learn basic cooking techniques for soups, stocks, sauces, braising and stewing. This class, just like a good meal, wouldn’t be complete without dessert participants will learn basic dessert techniques which include dough, mousses, and custard. Prerequisite: in order to take this class, participants must have taken the Introduction to Gourmet Cooking course. The following classes are taught by Food is Good Gourmet Chefs and are held at the Culinary Center and costs $179

| Hors d'oeuvres and Starters |
|
(6 hours) - Would you like to turn an ordinary dinner party into an extraordinary one? The secret is in the hors d’oeuvres and starters. Broaden your knowledge of how the beginning of your meal can be developed and how to entertain your guests by staging courses. Learn presentation techniques and expand your selection of both hot and cold recipes for starter courses that will wow your guests. | Exploring the World of Wines |
|
(3 hours) - Whether you consider yourself a wine expert or someone who wants to learn more about wines, take this class. Participants will review the characteristics of wine while researching the origin, regional influence, traditions, and methods of producing fine wine. Additionally, participants will get tips on understanding wine labels and hints on buying wine and aging. | Food and Wine Pairing |

(3 hours) - Are you like a lot of individuals who want to learn more about pairing the right wine with the right food in order to make a meal more enjoyable? If so, then take this beginner’s level course where you will develop an understanding of the marriage between food and wine and review the characteristics of wine as well as learn the methods of comparing or contrasting the flavors of a meal. Gain the professional insight that will heighten everyday dining from the ordinary to an extraordinary experience. Prerequisite: in order to take this class, participants must have taken the Exploring the World of Wines course. | Healthy Cooking for Healthy Living |
(3 hours) - We all would like to eat healthier and not sacrifice flavor and taste, but can this be done? Yes! Take this course where participants will explore healthy cooking methods and prepare healthy meals by making the delicious recipes that are talked about in class. The best part of all is that this course will include some vegetarian dishes using tofu and tempeh. So enrich and enhance your life by learning healthy cooking for healthy living!
